A bright and saline-flecked starchiness greeted us at first nosing. Then thicker oilier notes emerged, along with things like wet beach pebbles, salted nuts, toasted trail mix seeds and camphor. A sooty coal scuttle and some sweetened olive oil. Reduction made it greasier and grassier. Bacon fat frying in a pan, oily sheep wool, putty, hessian and trampled wildflowers. The neat palate was similarly sweet and salty initially. Calamari with black pepper, ointments, chalk, crushed aspirin and tarragon. Some mint tea and softer notes of juniper and bitter lemon. Water brought more savoury earthiness, turmeric, pebbles, a kiss of antiseptic and bitter lime pith.
