Tasting Notes
Thick cream oozed from a banana split, served with sliced ripe mango and a sticky fudge doughnut. More delights followed closely as vanilla panna cotta was complemented by finger limes, strawberries and coconut with holy basil. A dash of water unleashed an abundance of rum and raisin fudge with dried cherries, juicy apples and fruity breakfast cereal on a bed of pink wafer biscuits. Now strawberry tarts arrived with a red wine jus alongside soft-centred meringue, crumbly biscuits and a final topping of sultanas and dried figs. After spending eight years in an ex-bourbon hogshead this was transferred to a first fill American oak oloroso hogshead.
