Tasting Notes

The nose was like sitting on a hay bale in a garden with earl grey tea, rich tea biscuits and some sticky, nutty, indulgent baklava. The palate was clean, well matured and deliciously sweet, with danish pastries and vanilla custard slice, honey, toffee and coconut ice; hints of pink peppercorns, ginger and cinnamon warmed up the finish. To the reduced nose we added impressions of rye bread, planed pine and tobacco, cherry clafoutis and coconut marshmallow teacakes. The palate, still mouth coating with syrup, brandy butter and poached pears in honey, had a pleasant finish of clove, nutmeg and oak.
