Tasting Notes

Here we have a rarity indeed. A small batch, decades old cognac from our friends at cognac house C5. While the batch does not meet the requirements to be labelled as vintage, the eau de vie was produced in a single year some decades ago. A perfect snapshot in time.
 

The colour carried a remarkable hue, the distilled remnants of marmalade and golden syrup. Drawing closer the aromas began to excite the senses, a heady hybrid of fruit and wood. A strong scent of linseed oil recalled memories of polished leather ricocheting off cricket bats in the hot sun of a summers day. Subtly spiced apple chutney and tarte Tatin meandered with pears poached in rum agricole on a sturdy table of polished Limousin veneer. Oak veered towards cedar wood with a soft and mouth-filling sensation that was mature yet embraced a youthful excitement. Green apple and crunchy pear offered a freshness that, when combined with ginger marmalade, honey roast parsnips and sweet tobacco leaf, created a harmonious sense of the divine. Hints of fennel and herbes de Provence whispered in the distance and continued through to a delicious finish of marzipan, walnuts and tingly ginger. Care should be taken with its inclusion to not over-dampen the spirit.
