Tasting Notes
The nose suggested grassy, herbal, riverbank notes; toffee apple, candy floss, lemon and tart berries. The palate was sweetly satisfying, with chocolate-topped oat biscuits, moist gingerbread and chocolate hazelnut spread on porridge – then chewed pencils, dark chocolate and tobacco to finish. The reduced nose found redcurrants, liquorice-flavoured lozenges and pastry, while the sun shone over gorse bushes and pine forests. The palate gave us slightly burnt custard tarts, salted caramel, sherbet lemons and hazelnuts; then a finish of coffee grounds, bay leaf and liquorice root. At 22 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
