Tasting Notes
We made Belgian waffles with melted white chocolate, vanilla ice cream and coconut flakes as well as almond tartlets with a plum cream and pineapple cubes. A robust taste neat of wood, leather and tobacco was complimented by a sweet and spicy orange liqueur, finishing with dark cherries soaked in brandy, muscovado sugar and tarragon to which we added a pinch of pink peppercorns all served with yoghurt ice cream. Water produced rhubarb crumble, banana toffee, fudge, and sticky toffee pudding on the nose while the taste, now sweeter and smoother, certainly more balanced, was that of tangy plum and chipotle sauce and chocolate- dipped ginger-spiced lychees.
