Tasting Notes

Descriptors on the nose neat came fast and furious, with heather ale, birch sap, nougat, maraschino cherries, caramelised oats and peanut butter rice pop treats. Gooey and chewy to taste, with a hint of waxiness and soft leather before we bit into a puff pastry apple turnover made with grated orange and lemon zest. With the addition of water, we felt as if we were standing next to a spring snow melt waterfall. It was clean, clear and crisp, which was also reflected on the palate. The flavours were of chocolate bark made with fresh mint leaves and samphire cooked with butter and lemon juice.
