Lobster sizzled on a grill as sea-spray splashed onto kelp and dusty ash from a beach campfire. Among the ash and singed sticks we found toasted pineapples and peaches with notes of liquorice, seaweed and scotch broth. With a little water greener notes appeared of pine and moss with slightly floral aromas of fresh linen in bonfire smoke. A nuttiness embraced smoked almonds and dry roasted peanuts on the nose, served with a little smoky barbecue sauce. Flavours on the palate now combined black pudding, green peppercorns and pickled ginger with liquorice sweets before a mellow finish left the lingering appeal of sweet wood smoke.
