Tasting Notes
The impression we had was like a fragrant perfume with the top notes being a sunny day by the beach. The middle notes were fresh green apples and the nearby machair, with base notes of honeycomb and vanilla – enchanting! This was sweet and creamy on the palate, with plenty of vanilla but also a citric saline note like that of the cocktail ‘salty dog’. Following reduction, we lit a beeswax candle as we brewed a lemon verbena and mint tea. To taste, we detected a honey sweetness along with the freshness of a lemon sorbet, and a pleasant touch of oaky bitterness in the finish.
