Tasting Notes
The nose had us imagining jelly babies playing with glace cherries and marshmallows, while honey dripped from an apple tree hive on to lilies below. We naughtily stole their marshmallows and ate them, followed by key lime pie and sauternes-poached pears; then we defiantly puffed candy cigarettes while blossoms fell from the same apple tree. The reduced nose discovered berry tart with custard, gorse flowers and chamomile, quince jelly, melon and popcorn. The palate now had pink wafers, apples, pears, lemon peel, peppermint and coriander seeds warming the finish. At 21 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
