Tasting Notes

All the aromas one would expect were present; juniper, coriander, angelica, liquorice and citrus but then also the surprising scents of pine sap, pink peppercorns, a bunch of lilies and unrolling a camouflage netting. On the palate neat a delicate bitter lemon flavour to start soon replaced by angelica root woody-ness and stone fruit nuttiness while we found peach-lavender jam in the aftertaste. Diluted we walked into a forest on a cool late-autumn morning, with the dew shining like pearls, as we cut down a conifer tree. The taste was like a large sip of cold pine-flavoured black ice tea with a refreshing minty finish.
