Tasting Notes

Peppery and richly autolytic to begin. Hints of cremant d'Alsace, scone mix, herb-infused waxes, elderflower cordial, turmeric, waxed lemon peel and hessian cloth. Expressive, earthy and very much from 'this' distillery. A little water brings orange liqueurs, a heightened floral quality, Moroccan tagine spices, preserved lemon and soft medical embrocations. The palate is fulsome and richly textured with rum cake, milled oats, fried fruit chunks, bubblegum, bread dough, a lick of carbolic acidity and rich biscuity sweetness. Reduction offers up tinned apricots, herbal teas, porridge laced with maple syrup, custard-filled profiteroles, heather honey and a wonderfully juicy green fruity finish.
