Tasting Notes
Our immediate impressions were of subtlety, nuance and delicate complexity. A wonderful mix of spiced coconut cake, milky chai tea, gorse flower, scented candles, beeswax and dried dandelions. Vanilla scones and extra thick Scottish double cream too. Water brought out hardwood resins, herbal liqueurs, chamomile tea, furniture polish, potting shed earthiness and rolling tobacco. The palate was initially fulsome with olive oil cake, flower honey, linseed oil, floral-tinged waxes, aged farmhouse ales, bouillon stock, lanolin and frangipane tart. Water added things like hop syrups, crystallised fruits, lemon cough drops, eucalyptus tea and toasted fennel seed. Bewilderingly complex and life affirming whisky!
