Tasting Notes
Fresh doughnuts arrived on a bed of crispy seaweed, with the smoke of a coal fire dancing across the beach. A window fitter applies linseed oil putty to an old seaside cottage's aged sash-and-case. The palate was salted butter on cream crackers, wintergreen mint and a Devon cream tea. Water added fried bread, lanolin and cinnamon buns to both the nose and palate, with a sugary lemon and lime soda to finish. After nine years in an ex-bourbon barrel, we transferred this whisky to a refill #4 char barrel with toasted heads for the remainder of its maturation.
