Tasting Notes
Fizzy apple sherbet tingled the tongue as we stood at the end of the pier, the salty sea air carrying wafts of quince jelly and singed pink grapefruit skin. Opening our lunchbox we were delighted to find a fresh pea and mint salad with dill and spicy horseradish dressing, a few toasted almonds and warm pumpernickel bread. Adding a few drops of water unveiled a new wave of juicy quince but now alongside hibiscus petals, dried mango and loose tea leaves in an old cigar box. For dessert we found sweet marzipan encased in lemon drizzle cake, with chunks of salted caramel and a layer of lime marmalade to round things off just perfectly.
About The Vaults Collection

The Collection takes its name from the Society’s historical home at The Vaults in Leith, Scotland’s oldest commercial building in continuous use whose connection with the drinks world dates back to the 12th century.
