Tasting Notes
Warm baking spices next to vanilla syrup, honey and marzipan were the initial aromas mentioned. Given time, the scents of nutmeg, bananas and a soft, lightly musky note of cashmere wool appeared. We were all surprised by the spiciness on the palate neat; pepper, ginger and cinnamon. There was also sweetness in the form of a warm ‘thunder and lightning’ scone. Water released the scent of a blackcurrant frangipane tart, vanilla slices, cognac liqueur-grilled orange slices and barbecued mangoes with pistachio nuts and honey. The smooth mouthfeel was like a red fruit salad with vanilla ice cream and honey syrup.
