We mixed a cocktail called ‘Smoked Cinnamon’- a concoction of cinnamon syrup, apple juice and grain whisky served in an old-fashioned glass and garnished with a smouldering stick of cinnamon. A silky and creamy mouthfeel like a rich orange chocolate caramel sauce with a stimulating spice in the finish. Water added aromas of mango chutney, tamarind paste and turmeric before deeper notes of red sandalwood furniture appeared. To taste, a beguilingly sweet and syrupy clementine baba served with a spiced cream using rum and nutmeg. Following eleven years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill toasted French oak barrique.
