Tasting Notes
Initial nosing revealed immediately lovely aromas of bramble jelly, cassis, juniper berries in wine reduction, dark fruit chutneys and plum wine. We also found aniseed notes that evolved to sweet liquorice and acacia bark. Water elevated the sweeter, juicier vibes, with treacle sponge cake, candied pecans, walnut wine, strawberry jam and sweet prune juice all coming through. The palate was wonderfully detailed, with exotic and dried dark fruits, then balanced by miso paste, five spice, wormwood, hessian and damp pipe tobacco. Persistent exotic fruit-salad juiciness remained throughout. Water revealed herbal cocktail bitters, jasmine tea, more aniseed and more pure exotic fruit ripeness. Old crystallised honey, aged mead and sweet ruby ales also came through. We really loved this one: classical, fruity, old-style sherry!
