Tasting Notes
This dram brought together influences from the cask (a second fill oloroso hogshead after 13 years in ex-bourbon wood) and from the distillery process (especially worm tubs). The resulting rather robust nose suggested maple syrup, toffee nut brittle, dark chocolate with cherry pieces, egg custard tarts, cured meats and dates wrapped in bacon; maybe even an inner tube dipped in wine. The natural strength palate combined marmalade on burnt toast, chocolate halva, strong menthol lozenges and a slightly overcooked Christmas ham, with liquorice, ash and mulled wine to finish. In reduction we tasted salted pretzels, cherry cola, ginger cake and Dundee fruit cake.
