Tasting Notes
Amidst the clear earth and falling autumn leaves we found flashes of green as olive oil and lime zest led us towards margarita cocktails topped with wood ash. The palate was like a smoky bloody mary with tomato vines, chilli sauce and singed heather swirling deeper into rosemary, thyme and waxy textures merging with sticky honey. After adding water we were in familiar surroundings at the seaside amongst rock pools, washed up tarry ropes and dried kelp on sun-baked sand. Green flavours remained that now embraced grass, marjoram and sage alongside a fresh shellfish platter served on an acacia wood board.
