Tasting Notes
The aroma awoke memories of the essence of a bohemian lifestyle in the 1960s and 1970s, as seen at the Woodstock Festival – a carefree vibe, flowers behind ears, radiating love and peace. There was plenty of smoke on the palate too, smouldering firewood and peat slabs with intriguing medicinal antiseptic notes, before a surprising sweetness of golden syrup in the finish. On the nose following reduction, we poured a sizzling, spicy peppercorn sauce over sweet potatoes, while the taste was like a spoonful of creamy leek and potato soup. In the soup we found pieces of gently smoked Hungarian pork and beef sausages flavoured with paprika and a hint of chipotle called debrecener.
