Tasting Notes
This had a clear maritime character with the scent of sea spray, slices of cantaloupe melon sprinkled with sea salt and a salted caramel cheesecake. On the palate at first fresh coconut water combined with a lime and mango coulis before an extremely pleasant, creamy, spicy oak flavour started to linger at mid-palate, offering a very supple proposition. Following reduction, we sat in front of a canvas tepee on the beach smelling warm pineapple, peach and pecan muffins which we enjoyed with a tropical mango porridge. Invigorated, we then walked along the sand to collect some driftwood for the beach bonfire that night.
