Tasting Notes
The perfume of caramel cream was intertwined with raisin glaze, figs dipped in molten chocolate and brandy-soaked savoiardi biscuits. Very much like the nose, the palate was amplified by a splash of orange bitters, cherry sauce and fried plantain tossed with nuts and cinnamon. Reduction amplified the raisins, alongside brown sugar and rum agricole with a twist of lemon. Able to handle liberal amounts of water if so desired, the finish retained its sweetness, the raisins giving way to candy notes, spicy mace and plums squeezed through hessian. After four years in an ex-bourbon hogshead, we transferred this to a second fill oloroso hogshead for the remainder of its maturation.
