The nose gave us Swiss roll, Victoria sponge, cereal and biscuit notes, eventually turning to mandarin cheesecake, banana chips and jelly babies. The palate had sweet, tart lemon drizzle cake and key lime pie; its youthful élan of Buck’s Fizz and peach Bellini preceding a dry finish of cinnamon, cardamom and pink peppercorns. Water took us to gardens, sniffing herbs and flowers; the fruit was now strawberries and cream, raspberry ripple, hibiscus fruit tea and lemon peel. The palate became almost cocktail-like – peach cobbler, rhubarb rock, elderflower pressé, lemon and juniper; a warm hug of black pepper and nutmeg to finish.
