Tasting Notes
A wonderful nose neat with plenty to discover; custard creams, melted salted butter, desiccated coconut, marzipan, toasted acorns, sea buckthorn jelly and the list could just go on. Wait for the taste, baked acorn squash with porcini mushroom custard followed by rich cinnamon-nutmeg ice cream and Morello cherries marinated in lightly spiced wine. After the addition of water, the aroma was that of rich peach syrup added to a vanilla bean frappe or a yoghurt frappe with granola breakfast cereal. On the palate, we took a sip of a Mojito prepared with white rum, Gomme syrup, lime juice and freshly muddled mint leaves.
