We enjoyed a brunch classic of American style pancakes with crispy streaky bacon and maple syrup accompanied by sweet bread with honey and saffron as well as a flat white or, for the even more sweet toothed, an affogato. After reduction we were transported to a shallow bay with a sheltered beach and perched, high above, an old stone hut to house boats and equipment and shelter to generations of fisherman. Imagine being inside during a storm, the wind was howling, you lit an oil lamp and as comfort food you had prunes, dates and candied hazelnuts with you. Following eight years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill Oloroso hogshead.
