A sublime olfactory experience which took us all to different places. Bramble jam and engine oil, smoked lobster in clarified butter and a pulled chicken burger with barbeque sauce. On the palate an amazing, sweet smoke, blackberry and blackcurrant jam infused with violet liqueur, flaked smoked almonds and peppermint icing. Be careful when adding water, but with a tiny drop, more maritime like a deep pan seafood pizza served with scampi, mussels and squid as well as softly peat-smoked samphire. To taste plenty of herbs, juniper, coriander and rosemary and lavender – truly a flamboyant extravagance!
