Tasting Notes
After 12 years in ex-bourbon wood we introduced this into a first fill ex-bodega PX barrique. The nose initially promised juicy fruits (black grapes and plums in a wooden bowl); other aromas included black pepper, eucalyptus, cocoa powder and freshly conditioned leather. The palate – sweet, woody and nutty – provided chocolate raisins, desiccated coconut and chocolate-hazelnut spread, with a lick of toasted oak stave to finish. The reduced nose became warmer and more exotic, delivering cherry crêpes, marzipan and barbecued figs drizzled with sweet sherry. The palate now had a silky mouthfeel, with prune and armagnac frangipane tart before a teasing finish of gingerbread and lebkuchen.
