Tasting Notes
Initial comments on the nose neat were all ‘green’, as in grassy, hedgerows, moss-like and eucalyptus but then descriptors of toasted lemons, honey glazed walnuts and coal scuttle appeared almost from nowhere. After taking a sip we felt transported to an old-fashioned malting floor in full use with the green malt being dried in the kiln. Following reduction, we walked up a hill covered in the purple hue of blooming heather and arriving at the top lit a fire with peat and heather. Someone got a guitar out as we sang songs and enjoyed a beautiful sunset, matching almost the colours of the hill slope, over the sea.
