An immediately bonkers dram we all agreed. Mature demerara rum colliding with freshly varnished hardwood furniture. Upturned sods of damp earth garnished with ground black pepper and pencil shavings. Pinecones, graphite oil, freshly sawn plywood and the inside of a newly-built acoustic guitar. Add to that pumpernickel bread, bonfire embers and red liquorice. Reduction opens up ginger fudge, dried lavender, anthracite and a bouquet garni of dried herbs dusted with chilli powder. The palate when neat is full of toasted wood spices such as cinnamon, clove, five spice and nutmeg. Warm earthiness, further black pepper, chai tea, cherry cough syrup and various herbal cocktail bitters. Water brings potpourri and many dried flowers. Darjeeling tea with assertive tannins, green peppercorns, hot paprika, spiced beef jerky and chilli-infused stout beer. Matured for nine years in a bourbon hogshead before being transferred to a new oak, heavily toasted barrique constructed from 70% American oak and 30% European oak.
