We were making apricot jam, using a hot copper pan, while we enjoyed a glass of Pinot noir wine with the typical flavours of mushrooms, truffles, all slightly earthy and leathery as well as plenty of spice - cinnamon, caraway and rosemary. With water fruity aromas of cherries, strawberries and ripe tomatoes were entwined with the herbal scent of rhubarb, beetroot and black olives. Sweet and mouth-coating, like the gooey centre of a chocolate brownie, and in the finish, a Pear Tree Martini – spiced pear vodka, elderflower liqueur, fresh lime juice and Angostura bitters. After nine years in an ex-bourbon hoghead we transferred this whisky into a first fill sauternes barrique.
