Tasting Notes
The neat nose appeared gently ashy, with impressions of coal scuttles, fire embers in a cast-iron hearth and feelings of lightly smoked pork scratchings. In time it became gentler and more evocative, with sandalwood and seashore freshness. Water brought beach sand, fragrant myrtle and gentle wisps of peat smoke. The neat palate surged with peat influence, loads of pickled tarragon, malt vinegar, smoked sea salt and herbal, Orcadian-accented peat reek. It had a fantastically oily and juicy texture too! Reduction brought smouldering, resinous fir wood, antiseptic, mineral oils, dried seaweed and camphor. And it was still wonderfully oily and peaty. At eight years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
