Tasting Notes

This subtle nose starts with biscuity notes (jammy dodgers, blackcurrant tart, café noir) – then brine intrudes – rock-pools, barnacles on a yacht, a seaside picnic – wood embers and damp tweed. The palate is a sweet/salty/citric combo – sweet barley, green apple, lobster claws, tequila shots, liquorice and aniseed – the finish is charred oak and smoke. The reduced nose has Atlantic breezes ruffling marram grass, sea shells, Pernod on oysters, coltsfoot rock, hospitals and candied angelica and citrus peel. The palate now suggests tar, linseed oil, honey and sugar-coated fennel seeds, with nutmeg, liquorice, burnt sticks and peat smoke numbing and tingling the finish.
