A smooth, sweet melody greeted the panel of kumquat cake with an orange glaze and strawberry fudge as we crushed a geranium leaf between our fingers and picked up the scent of citrus and other fruits with a hint of spice and roses. On the palate we bit into a lemon bar - a buttery shortbread crust with a gooey, creamy, lemony filling on top. Following a drop of water, on the nose, sweet humbugs, dried cranberries, hibiscus and rosehip appeared, while to taste plenty of almonds, nougat and marzipan. The long finish was rounded and silky smooth combining the subtle sweetness of an orange with a menthol pine freshness.
