The panel went crazy describing the nose – ‘wood fire, ash and embers’, ‘shucking oysters wearing waterproof waders’, ‘putting up telephone poles by the beach, with a muscle rub after’ and ‘chestnut vendor by the sea’; all this inspired by aromas of tar, creosote, salt sea air, ash, antiseptic, leather and rubber. The palate was lively, zesty, salty and herbal – pimento olives, skillet-sizzled bacon, salted pretzels and Arbroath smokies. This turned sweeter with water – we now got walnut whips, liquorice allsorts, pork scratchings dipped in chardonnay, burnt potato skins, coal smoke and tar. ‘A slap in the face with a welly boot!’
