We lit a vanilla-scented beeswax candle before the aromas of honey on buttered scones, desiccated coconut, nutmeg, brown sugar, fruit pastilles and lime juice all made an appearance. On the palate neat we discovered a taste of Spain with bizcochos borrachos – a light spongy cake drizzled with a sweet sauce of brandy, lemon and cinnamon. With water we ended up with a typical British dessert, lime and coconut syllabub with strawberry and basil served in chilled glasses. The combination of basil, coconut oil, pineapple and ginger and a generous splash of white rum certainly packed a delicious sweet, clean and fresh punch –a sunny smiley dram.
