A lovely delicate distant smoke as we imagined watching Audrey Hepburn as Holly in ‘Breakfast at Tiffany’s’ using an oversized cigarette holder. Plenty of peat smoke on the palate, blowtorched mango, vanilla and brine next to oily slightly medicinal flavours as well as hot smoked sweet cured mackerel strips – “you can take a toonie out of Campbeltown, but…”. After we added water, lemon and salt, ferns and seaweed next to rum and pineapple on the nose while to taste fresh oysters with freshly squeezed lemon juice and pink pepper macerated strawberries. After seven years in an ex-bourbon barrel, we transferred this whisky into a 2nd fill barrel which previously matured peaty whisky from Society cask 93.108.
