Tasting Notes
We found peat smoke, Germolene and garden bonfires, but vanilla ice-cream, white chocolate and blancmange sweetness danced centre-stage. The chewy palate combined toffee, nougat and Nestle Crunch with restrained smoke, followed by spice cake and aniseed warmth - a true harmony of flavours. The reduced nose evoked Horlicks and a box of chocolates by the fireside - a real slippers-on, relaxing feel. The palate gifted us delicious tarry sweetness (humbugs, liquorice, sugar-coated fennel seeds, hot-cross buns), then a comforting finish like chewing on the briarwood stem of a tobacco-filled pipe. After 12 years in bourbon wood we moved this into a second-fill barrique.
