Tasting Notes

A freshly painted tugboat chugged through a salty mist of lavender and heather honey, its tarry docking ropes afixed near a brimming engine lubricated with fruity olive oil. The captain's oral assessment proclaimed rich, smoked honey, coal dust, an unlit cigar and menthol cough sweets, alongside our cargo of barbecued lemon, raspberry fruit pastilles, cherries soaked in booze, grape skins and opulent heather honey-glazed lobster. Agua infusion unveiled whiffs of earthy dunnage, eucalyptus, a sea breeze and clay pots. As we turned for shore, sweet chilli langoustines danced on the palate with maury sweet wine, while charred staves, a smoked oyster emulsion, peppermint tea and dried baking spices comforted the crew until home's warm embrace. After 16 years slumbering on an oloroso puncheon, this whisky was transferred to a 2nd fill #4 char puncheon for the remainder of its maturation.
