A wonderful black walnut gloss colour greeted the Panel. On the neat nose the bouquet of aromas such as tobacco, oloroso sherry, dark cherries, chocolate and heather honey exuded charm. On the palate there was a deep, serious sherry expression, like a square of 100 per cent cocoa chocolate and tonka bean custard tarts. Following reduction, we added to the chocolate, with a rose water, strawberry and black cocoa tart alongside sticky toffee pudding. The taste was sublime, as we imagined a combination of a Swiss roll and a chocolate yule log. Following 10 years in an ex-bourbon hogshead, we transferred this whisky into a first fill Spanish oak oloroso hogshead.
