Tasting Notes
We entered the captain's stateroom situated in the stern of an old wooden three-masted sailing ship. The single bunk, a desk, a filing cabinet and a hanging locker were all made from mahogany. We sipped from the open bottle on the captain's desk; the palate was sweet and smooth, like an old brandy, with flavours of treacle, coconut and marinated figs in a rum and white wine syrup. A drop of water and we could envisage the skipper sitting at his desk looking at a map, a mariner's compass by his side and smoking a cigar. At 19 years of age, we combined selected hogsheads from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
