Thick buttery notes and sweet icing coated roasted chestnuts and sponge cake with a layer of apricot jam, while cinnamon, liquorice and sultanas suggested dark rum. Flavours were a sticky combination of cloves, nutmeg and star anise blended into honey syrup with dark chocolate, coffee liqueur and leather. Adding water brought us orange oil with lemon, thyme and peppermint, before cereals in hessian sacks combined with dried apricots, marmalade and allspice mixed with strawberry jam. Toffee popcorn and red liquorice now appeared on the palate with apples, pears and peach crumble, while sugar coated almonds and cask char merged on the finish.
