After twelve years in ex-bourbon wood we transferred this into a charred second-fill red wine barrique. The nose evoked a French village square in autumn – red grape pressings, foie gras on toast, perfumed silk scarves, smouldering leaves, cured meats and hints of pipe tobacco. The soft, sensuous palate combined honey-drizzled figs, stewed apples and poached pears with cranberry juice and candy floss sticks; dark chocolate ginger to finish. Water brought hibiscus flowers in syrup, apple strudel and plums to the nose; the palate gained Turkish coffee, cigar boxes, fruit tea and marzipan and candied peel embraced in dark chocolate – alluring and distinctive.
