Tasting Notes
There was a lot to unpack on the first nosing, as the Panellists found differing flavour journeys. One suggested wholemeal toast, dried figs, lemon curd and citrus coulis, while others detected fresh orange juice, caramel chocolate, spicy vanilla double cream and even miso soup with spun sugar. However, on the palate, unity was restored, with a plentiful fruit basket of lemons, strawberries, melon, mango and pineapple, followed by sweet notes of cinnamon swirls, buttery shortbread and barley sugar that balanced the dram perfectly. With water, the aromas entered the realm of the bakehouse, evoking danish pastries, croissants and sweet raspberry coulis. The reduced palate was honeyed, with lightly toasted sourdough, butterscotch sauce and spices such as anise, cinnamon and nutmeg, culminating in a zesty yet creamy finish.
