Spirit NOTES

The panel were initially taken somewhat aback by the aroma, which was more reminiscent of a lighter old school highland dram at first. Lots of plasticine, baking soda, bread dough, sunflower oil, minerals, chalk and limestone. Also dried tarragon, menthol and warm, freshly malted barley. Soft but bold in character. Reduction added sweetened porridge, caraway, soda bread, breakfast cereals dusted with icing sugar and waxed canvass. The neat palate was wonderfully oily to begin with, mineral oils, rapeseed oil, then putty, sandalwood, bay leaf, citric ointments and pressed flowers. Water brought soft lemony notes, scented woods, chamomile, cough drops, miso, butter mints and barley sugars.
