Tasting Notes
A rainbow of fruit arched over us, scattering delightful aromas of citrus, juicy mango, pineapple and soft fruit compote; also honey, caramel, condensed milk and vanilla. In reduction it became even fruitier – (fresh pear, candied apple, peach, strawberry, blueberry) – with curious hints of pine resin and mulled wine. The neat palate also delivered fruit (lime marmalade, watermelon, orange pulp) and vanilla fudge – but the spice heat surprised us – naughty aniseed, sinful cinnamon and mischievous chilli. This really did mellow with water however (soft ginger, cinnamon and nutmeg and teasing white pepper), letting the peach cobbler and paradise cake sing more clearly.
