A massive and immensely weighty nose that began with carbolic acidity, tar, charred bacon rashers in hot oil and English mustard whipped together with wasabi and horseradish. Then boiler smoke, petrol, iodine, hot kelp in the sunshine and a deafening peat note. Water did little to calm things down. Lots of carbolic soap, lanolin, wood ash, hot BBQ coals and more of these powerful mustard notes. The palate arrived like an anvil from a cannon! Hugely ashy, tarry, medicinal and oily to begin. Also with a huge, thick carpet of peat smoke, mussels pickled in brine, seawater, roof pitch and charred hessian. With reduction we found it became stunningly oily and fat! Loads of salt solution, mineral salts and white hot peat. Simple and direct, but brilliant and tremendously powerful and well-structured.
