This whisky also came to life 10 years ago, and this first-fill bourbon hogshead has sweet woods, apple, vanilla and plums poached in red wine, not to mention oiled hardwood floors in an old banquet hall, chai, nettles and spiced peaches. It was a huge hit with the team here when we opened a bottle (or two) to celebrate our 10-year anniversary this month.
A nose full of woody aftershave; sweet woods, apple, vanilla, and plums poached in sweet red wine. The palate echoed the nose, all the while a slice of cherry pie collided with Victoria sponge and a glass of ruby port served with grilled pineapple. Water offered clean earthy notes of oiled hardwood floors in an old banquet hall, chai, nettles and gunpowder in a creamy curry sauce. The palate again took its lead from the nose, delivering a starter of nettle soup, a main of spiced tinned peaches, and a dessert of bergamot and red wine jelly.
