Tasting Notes
Tropical treasure spilled from the glass as mango, lychee and peach drifted above a deck laden with smoked porridge, salmon and lemon-poppyseed shortbreads. Shrimps and (unsmoked) porridge were safely stowed in the savoury hold, while the palate fired its cannons of sweet heathery ash and square sausage crowned with apple chutney. Ash-rolled goat’s cheese paired with quince jelly and well-fired morning rolls made a hearty feast ready for any afternoon plundering. A splash of water unfurled sails of vanilla, crushed shells and samphire in butter on a salty sea breeze. The finish shone with peppered pineapple, lavender honey, scallops and a gleaming splash of sweet wine in a tankard.
