A bountiful nose full of charred pineapple, sautéed bubblegum, olive oil, mineral salts, glazed pastries, fermenting passion fruits, medical-tinged esters, molten fruit pastilles and pressed wildflowers. Reduction brought lime jelly, wet peach pebbles, sweet waxes, putty, tropical fruit teas and wee touches of glaze and mead. The neat palate detonated with juicy fruit chewing gum, sweet childrens medicine, putty, herbal scented waxes, lemon curd, herbal mouthwash and quinine. Water gave us dried sage, rosewater, lychee cordial, hessian, charred fruit chunks on a BBQ and things like gorse flower, natural tar and coconut. Super!
